When life gives you lemons… make delicious lemon bars!

For the shell:
2 sticks salted butter
1/2 cup granulated sugar
2 cups flour
For the filling:
6 extra-large eggs
2 1/2 cups granulated sugar
2 tablespoons grated lemon zest
1 cup freshly squeezed lemon juice
1 cup flour
Confectioners' sugar, for dusting
Preheat the oven to 350 degrees F.
First make the crust: Cream the butter and sugar until light. Mix in flour until the mixture becomes dough like. Flatten the dough and press it onto a baking pan, building up a 1/2-inch edge on all sides. Chill in the refrigerator for 5 minutes.
Bake the crust for 20 minutes, until very lightly browned, set cool.
While the crust is in the oven, prepare the filling. Whisk thoroughly together the eggs, sugar, lemon zest, lemon juice, and flour.
Pour over the cooled crust and bake for an additional 30 to 35 minutes, until the filling is set. Let cool to room temperature.
Finally, dust with confectioners' sugar.
